Chili

Ingredients

  • 2 16oz cans of salsa (I used no salt added)

  • 1 4oz can of chilis (or 1 12 oz can of green salsa).

  • 3 cans of beans (I used black, pinto, and kidney).

  • 1 28oz can of crushed tomoatoes

  • 1 cup quinoa

  • 1 can (12-16 oz) ale

      • This is of course optional

  • 1-2 Tbs chili powder + other spices

  • 1-3 cups low sodium chicken broth

  • Salt and pepper

Instructions

  1. Open all of the cans and jars.

  2. Dump everything (except for the quinoa) into a big pot

  3. Taste and season as necessary.

  4. Add the quinoa and stir well.

  5. If using an instant pot cook at high pressure for 15 min.

  6. If using a standard pot boil until the quinoa is fully cooked.

  7. Stir well before serving

  8. Serve with cornbread, cheese, crackers...whatever you want!

  9. Eat
